YogiSophies Kitchen ~ Simple Avocado Egg Salad

Hey everyone! I hope all is well! Today may be the first day its actually feeling cold here at home, but that’s not stopping me from sharing this yummy, quick, make-ahead-eat-all-week recipe that is also slightly summer-y….Oh well!

This will save your quick-and-easy-lunch life, keep you super full and its packed with protein and completely healthy! Think of it as your upgraded avocado toast….its also good for breakfast! I have also included some sweet recommendations below so you can customize it to your hearts content! I love that aspect of it because then it’s not the “same” thing every day. Feel free to play around with ratios of avocado:egg and the spices/extras you add. I’d love to hear about how you like it, because I’m all about trying new things!


Simple Avocado Egg Salad
4 Hard Boiled Eggs
1-1.5 Avocados
A good spoonful of plain whole-milk Greek yogurt
Splash of lemon juice (to preserve)
1-3 Tablespoons of Relish
Salt and Pepper

Mash this all together with a potato masher or a fork till desired consistency is reached.

Too easy, right?!

Here is the fun part…..optional mix-ins and toppings! I’m going all Cold Stone Creamery on this stuff. Remember, you can always add, but you can’t take away so start small with your additions and add accordingly.


Sophie’s Favorite
Top with Parmesan cheese, alfalfa/radish sprouts, red pepper flakes, and Blackberry Ginger Balsamic Vinegar (this stuff is the best for everything…I mean EVERYTHING.
Serve with lettuce on some seeded whole-grain bread!

Other variations…
Chopped red onions
Diced Radish
Chipotle Olive Oil
Harissa Olive Oil or paste
Lime Juice
Basil and/or Basil Olive Oil


Heriloom tomatoes (cherry, halved or big, sliced)

Mustard (if your actually into that…)Red Bell Pepper

Thyme or Tarragon
Cheddar Cheese
And of course…Sriracha!

So there is a little creativity boost for ya! Tap into that second chakra and get cooking! 😉
